Ah, Paris. How do we love thee? We are longing for the day when we can finally meet and end the years of longing and loneliness. Our day is soon, dear Paris. But just because we cannot set our feet on your soil just yet, we still love the foods of your land. Yes, we take pride in preparing, tasting, and savoring French flavors and dishes. And although many of your recipes and cooking techniques are very long and complicated, some of your best creations are simple, with elegant flavors and nuances. Today, we celebrate you Paris with a Tartine, or opened faced sandwich. This is how we made it:
We found a loaf of the very best French style bread we could and cut it with our favorite bread knife into slices. Then we smeared it was a touch of Dijon, from Dijon France, our second favorite French city. Next was a generous smear of goat cheese, know as chevre to the locals. All finished with a sprinkling of thyme and pepper, then drizzled with the very best extra virgin olive oil we have. Every bite is a little bit of heaven and it brings us one step closer to you ma cherie.
