White Snow Day House Chocolate Chip Cookies

Today was a snow day.  Meaning we got more than an inch of snow in Seattle, and the city shut down.  There was a lot of white going on and it inspired us.  In our cookbook, we found a recipe that called to the white, house that is.  The first family (which one remains a mystery) chocolate chip cookies.  Usually we tend to make things a little lighter, this one came programmed that way.  Using a prune puree in place of butter it promised a flavor punch minus the fat.  Well we didn't have prunes, but we did have dates.  Turns out we didn't have brown sugar either, but we did have sugar and molasses.  Not willing to venture too far out into the snow, we got cozy with the ingredients on hand, and prepped to cook. 

Surprisingly, these cookies turned out with the texture and taste of it's full fat version.  Who knew?  Using a egg white and only two tablespoons of fat, we didn't feel guilty about tasting the dough right out of the bowl, or sampling the 2/3 chocolate chips before they reached the bowl.  This is the way you are supposed to spend a snowy work day from home day?  Our are sure to thank us...if they get any that is.



White Snow Day House Chocolate Chip Cookies

3/4 cup white sugar, divided
1/2 Tablespoon molasses
1/3 cup date puree, recipe follows
2 Tablespoons softened butter
1 egg white
1 teaspoon vanilla
3/4 cup flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup oats
2/3 cup semi-sweet chocolate chips

Preheat oven to 375 F.

Combine 1/2 cup sugar and 1/2 tablespoon molasses in a small food processor. Add the sugar mixgture, date puree,remaining 1/4 cup sugar and butter in the bowl of a mixer. Beat until combined. Add the egg white and vanilla and beat until combined.

In a separate bowl, mix together the flour, salt and baking soda. Stir flour mixture into sugar mixture until just combined. Stir in the oats and chocolate chips.

Scoop cookies onto greased cookie sheets and bake for 10 minutes or until golden brown. Cool on sheet one minute and then transfer to a cooling rack until cooled completely.

Yields 24-28 cookies

To make date puree, combine 8 oz chopped dates with 6 tablespoon hot water in a food processor and process until smooth.

  1. LOL. Yup, more than an inch will shut the city down for good.

    I don't eat white chocolate. But this is a good recipe and I can substitute milk chocolate for the white.

    Yum! Cookie and coffee are good for a snow day.

    1. Oh no! We don't eat white chocolate. White was referring to the White House. We are dark girls. :)
