Eat Better! Tomato and Feta-Topped Balsamic Chicken

Welcome to 2012! As 2012 arrived and the holiday gut fest became an uncomfortable memory, getting in shape and losing weight found their way to top of many individuals New Year's Resolution lists. So how are your resolutions holding out? If you are anything like us, you are still in detox from the sweets and heavy foods, yet still in that craving stage.  We needed to call on the recipe gods and ask for help to find a dish that was rich, sweet, and satisfying without all the caloric intake.  Luckily the folks at Eat Better America answered our prayers.  In our inbox arrived a dish so simple, elegant and clean, it had to grace our table.


Chicken is simply topped with balsamic and Italian seasoning, then broiled.  Feta and tomatoes then rest gracefully atop the chicken and blast under the broiler to sweet and delicious perfection.  With the rich taste of balsamic and feta, it's hard to believe this dish is lighter, with only 200 calories per serving. So satisfy your cravings, and keep your New Year's resolutions while you do.

Tomato and Feta-Topped Balsamic Chicken

4 boneless skinless chicken breasts (about 1 1/4 lb)
2 tablespoons balsamic vinegar, plus extra for drizzling
2 teaspoons dried Italian seasoning
1/4 teaspoon seasoned pepper blend
1 cup halved cherry tomatoes
1/4 cup crumbled feta cheese (about 1 oz)
4 cups mixed greens

Heat oven to broil. Brush both sides of chicken breasts with 2 tablespoons balsamic vinegar. Sprinkle both sides with Italian seasoning and seasoned pepper. Place in a baking dish lined with foil. 

Broil the chicken with tops 4 inches from heat about 10 minutes, or until chicken is cooked; flipping halfway through cooking. Top with tomatoes and cheese. Broil 2 to 3 minutes longer or until cheese is lightly browned.

Divide greens onto four plates and drizzle with balsamic vinegar.  Top with a chicken breast and any left over sauce in the pan.  Serve warm.

  1. Nice one. We had a chicken salad too, but not as exquisite as yours. And speaking of losing weight...time to hit the treadmill.
